Sayote/Chayote

I have been gathering sayote from my garden for awhile now and I can’t keep up with the fruits. Some are getting mature already and ready to be planted again. Its funny how it gives fruits continuously and then suddenly stops and then continues fruiting again. I have made so many recipes out of these delectable fruits. I made fresh lumpia, stir fry noodles, chop suey, chicken tinola, and just plain stir fry sayote /ginisang sayote with shrimp and pork.
Sayote fruit is light green in color and have seed inside which is also edible. The young shoots and leaves can be eaten as salad, a mixture of blanched sayote leaves, tomatoes, red onions and season with Fish sauce/patis.
A native to Brazil, sayote is a good source of amino acids and Vit. C.
